2 1/2 cups sifted flour
1 3/4 cups sugar
1/2 tsp baking powder
1 1/2 tsps baking soda
1 1/2 tsps salt
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
1/2 tsp allspice
1/2 cup shortening
1 can 15 oz. applesauce (1 3/4 cups)
3 eggs
1 cup seedless raisins, chopped
1 cup finely chopped walnuts or pecans
Preheat oven to 350 degrees. Well grease a 9x13 or tube pan (I assume a bundt cake pan). Sift flour, sugar, salt, baking powder, baking soda, and spices into large bowl.
Add shortening and applesauce and beat one minute on low speed, then on medium speed for two minutes, scraping the sides of the bowl. Add eggs and beat another two minutes.
Combine nuts and raisins and fold into batter. Spread evenly into prepared pan.
(This recipe doesn't indicate how long to bake it so you might try the toothpick method to test doneness making sure not to overbake the cake.)
